Hutong proudly presents our first global collaboration – 𝐁𝐞𝐢 𝐅𝐚𝐧𝐠 𝐃𝐢𝐦 𝐒𝐮𝐦 𝐒𝐞𝐫𝐢𝐞𝐬 (Northern Style Dim Sum Series) – crafted collaboratively by our teams in Hong Kong, London, New York, Miami, and Dubai.
The Bei Fang Dim Sum Series introduces eight northern-style dim sum dishes, crafted using a blend of traditional and innovative techniques that result in a series of delicate, delicious dishes that capture the diverse flavours and culinary ethos of Hutong’s occasionally fiery northern Chinese cuisine.
Rich in history and flavour, these northern Chinese dim sum can be enjoyed individually, or as a tasting platter, allowing you to indulge in all eight dim sum, incorporating the rich traditions of both northern and southern China, a first for Chinese cuisine.
The Origin of Dim Sum
A centuries-old afternoon tradition with roots in southern China, dim sum, which translates to “touch the heart” in Chinese, was originally crafted as delicate snacks to be served alongside tea during travels. Today, dim sum is enjoyed across China, with each region boasting its own distinct array of unique dishes.
Chef Wah
With over two decades of culinary experience, Chef Leung Kwok Wah is the Group Executive Dim Sum Chef for Aqua Restaurant Group, overseeing all dim sum across the globe. Chef Wah has seamlessly integrated a modern twist into Hutong’s creations, crafting Cantonese-style and Northern dim sum dishes that honour traditional techniques while embracing innovative flavour combinations, capturing the hearts of diners the world over.
The Significance of 8
Available from the 8th of October, the innovative Bei Fang Dim Sum Series introduces eight northern-style dim sum dishes, which have been created by the global team of chefs across all Hutong restaurants. The number eight was not chosen randomly; it is considered a lucky number in Chinese tradition, provoking feelings of prosperity with the similarity of the Chinese pronunciation of the two words “ba” (8) and “fa” (prosperity).
Menu highlights include our Shredded Duck & Foie Gras Spring Roll with a filling made with tender roasted duck meat, shredded onions, and our secret house seasoning. Deep-fried until golden and crispy, the spring roll is served with Hutong’s exclusive homemade duck sauce and delivers all the complex flavours of our signature Peking duck in a delicious bite-size form.
Another innovative dish includes our Wagyu Beef & Black Truffle Siu Mai, a twist on thetraditional Chinese dumpling inspired by the widely known dish of stir-fried beef with scallions. Our siu mai uses tender wagyu beef and spring onions as the main base for its filling with the addition of black truffles, creating a unique aroma. The finishing touch of green onions sautéed in Hutong’s homemade green Sichuan peppercorn oil and chilli oil add a depth and richness.
